I would like to have just the kick and ride cymbal play for one of the verses effectively muting the rest of the kit for just that verse.

For the remaining parts I would like the full drums as usual.

Is there a way to achieve this muting and/or soloing in Jamstix.

Yes there is. See page 48, 18.3 "Limb Menu" in the User Manual.
