Had this option on. Now as the song has progressed I am finding that I need to be able to control this hit. Make it softer, turn it off completely.

I haven't been able to find how to do this. I have turned off the option in Brain/Fill Options, but it's still there. Do I have to recompose the song (or the bar) for it to take effect? Not really wanting to do that!!

I have also tried to lower the volume in the DAW when the cymbal hits, but it still sounds like a hard hit. I need it softer in certain parts. Is this possible?

I found out how!!! Looked in the manual again (I wasn't looking in the right place! I was looking in the Brain section) and decided to look in the Fill Generator, and yep there it was!!

Would it be possible to have control over this hit? Because it doesn't show in the Bar Editor at all. Or is the option to have this feature turned off and use the Fill Generator instead?

And if I have this feature turned on in the Brain menu, is it just adding a check to the option (End Crash) in Fill Generator for every fill?

You can toggle the setting for a specific bar in the fill generator. If you want to toggle it for a whole part, use Brain menu ->Fill Settings. For an entire song, you can do it via Song menu -> Global Actions.

You cannot control the velocity of those hits. If that is an issue in a song, turn the feature off and manually place crashes as desired in the 'Accent' tab of the bar editor.
