Does the tool/function FreeJam still exist any more? Or is JS now all about "fixed" songs?

Reason I ask is I play left hand bass/right hand "normal" keys and I just want to add some laid back drums (with the occasional increase in intensity) without necessarily having to set up specific numbers of bars etc etc.

More like having a list of "freejam" genres - funk, swing, latin etc etc. All still capable of responding dynamically to the midi velocities, but yeah, with no pre-determined number of bars or sections.

I did note the small section in the manual re Freestyle, but it did not explain how to setup various styles (as noted above) in any great detail?? Is there another section, or tutorial on this somewhere?

I recommend you jam with a single part set to 100 reps or so. Select any style/drummer you like and adjust jamming options for a response behavior that fits your playing style. Set the MIN DYN next to the song power knob to the lowest level of drum velocity you want to hear.

This will give you reduction on low velocity and power hand switching on high velocity for a chorus-like feel without having to set up parts.
