If I record a track on reaper that has the jamstix vst open, am I able to change kits and sounds AFTER the performance has been recorded or am I stuck with the kit I choose at the time?

A little more info please. When you say recorded, do you mean that you recorded the output of Jamstix creating an audio file? If so, then no you can't change the sound of that file you would need to re-record.
If you simply have Jamstix on a Reaper track as a vsti, OR if you created a MIDI file then change away in Jamstix.
Personally I rarely record output from Jamstix in Reaper. Once I tweak the part and like it, i just use the freeze function in Jamstix and let r play.

Sorry, I'll try and clarify what I mean. I want to be able to record a drum take on the TD-20 into reaper with Jamstix as a VSTi and later be able to mix and match different Jamstix drum samples to suit our drummers liking.

No problem, just use Jamstix in 'drum module mode' by depressing the current jam button. JS will then act like any other drum library. It will play your TD-20 output in real-time and you can record the TD MIDI in REAPER and play it back later with any kit in JS you want.
