Is it possible to configure Jamstix so that when using Drum Module Mode, the incoming midi is echo'd through to the midi output?

Under REAPER it's easy to set up.

New Track -> Right-click on the "in" grey button.

Record : Output : MIDI

And you're set !

Have a look at REAPER if you haven't done yet. Version 3 just went out this week: http://www.reaper.fm/about.php
