anyone know some tricks for replacing drum/percussion tracks with jamstix's awesome sounds?

Toontrack recently released their Drumtracker software, which allows you to convert a drum recording to midi which can be fed into any VST. There's a small variety of similar software. Unless you want to painstakingly put in all the midi by hand, you're going to need software like this, and it costs (Drumtracker is $150US).
