For example, if you don't have a sound, like China or Tom bounce,
you don't want Jamstix to play those notes.
Can you unmapp those sounds or do you have to choose another
rhythm that only have hits on drums and cymbals that you have
in your kit?

All you need to do is make sure that the key for that sound in Jamstix doesn't produce sound in your drum module. So it will just be silence. However, for cymbals and bounces, I recommend you map them to existing sounds like this:
China -> Splash or Crash
Tom Bounce -> Tom
