Is there any control to adjust Carter's tendency to drop snare hits? I've got a song that is almost perfect if I could get him to do it a bit less often.

Most likely due to priority issues with embellishments. Try lowering the priority slider for the missed snare hits.

If I could find that slider, I would do just that. Nothing like that in either the groove or the accent brain settings. (I'm using jamstix classic style) Is there someplace else I need to look for it?

It's in the bar editor, click on the snare hits it's dropping and you should see the priority slider in the window that pops up.
