When I have loaded a kit into Jamstix and click on the keyboard in the Kit window I get the correct sounds. It also works from an external keyboard. However, when I click on the drums on the kit window a get a Piano sound and a drum sound. Does anyone know how to make the piano stop sounding?

Sounds as if you have the MIDI output of Jamstix 2 routed to a piano sound in your host.
