OK, for my question, I will use The Right Hand limb as an example.

-I select a specific cell and a pop up menu displaying the drum sounds that can be assigned to the RH limb display.

-I select hi hat

-I click on the hi hat icon within the pop up menu to view the settings page.

I can see that there are various sounds for the hi hat like closed, 25%, 50%, 75%, open etc. etc.....

How do i go about selecting a specific hat sound to play for a specific note/cell?

As an example, the closed hat is what plays back for every cell i add to the RH row. But for a specific cell within the RH row, i want the playback for the hat to be at 50%. How do i select the 50% hat for that one specific cell?

Click on the hihat cell and then move the hihat symbol in the edit panel to the desired openness.

Is there a general setting to tell JS to use for example the 25% open hihat as the standard sound for hihat?

One way would be to assign the 25% hat sound to the 0% slot in the kit editor.

Imagine I would use it in one part of the song, in another the 'standard' hihat. Then the proposed way doesn't work.

But that's more a theoretical problem, nothing important.

There is another way:

Add a MIDI controller envelope to your host Jamstix 2 MIDI track for controller #4 (HH openness). You can now control the openness of the hihat throughout your song with the envelope.

Ok, good to know that it is already possible. I'll see if I get it running. So far I know nothing about MIDI controlers.
