i have a beat I want to use which would be similar to the verse, but recreating all parts of this song would be super interesting for me and would surely teach me a lot. Where would I start?

Personally, I start with 'Jamstix Classic' style and check boxes to get into the ballpark of each basic groove. Once that's done, I play around with several drummers to see who adds good accents, fills etc.
