I can't remember what setting it was or how to move individual drum kit parts on the Kit Screen e.g I want to move a cymbal positioned on the right to the left but don't want to just change the cymbal sounds.I also don't mean just reversing the kit.

i believe that the kit has to be unlocked (lock icon) on the kit screen then you can drag pieces around.

you can see the lock icon in this image to the right of the dice:
