How do I make Jamstix 3 stay on the current bar when I stop the editor player instead of it dumping me back to the first bar in the song?

It’s probably the host sending it to the beginning. Does the host have a setting to return to start on stop?

Disable "Sync when stopped" under Jamstix options. I think Jamstix 3 had that option.
