If I buy the Jamstix Package now, can I still use the sounds with Jamstix 2? Or should I just buy the regular one?

All the sounds of JS1 and all the Paks will also work with Jamstix 2. Jamstix 2 will detect them and offer them automatically in its selection windows alongside its own sounds.
